Heartland Cattle has selected and genetically tested heifers for growth and carcass traits — those same heifers will be on display at the McCook Farm and Ranch Expo.
The audience participants will be asked to predict which heifer(s) will genetically produce: 1) the most, 2) highest quality 3) and best combination of quantity and quality of beef.
Larry Corah and PLH will be on-hand to give a short presentation about the value of new genetic testing technology combined with proper management techniques to maximize rancher profitability.
Using primal cuts, “CAB Phil” would will give an on-site carcass fabrication demonstration; identify a number of newer retail cuts and describe how these cuts might best be prepared and cooked.
Learn the importance of starting with a high quality beef product combined with proper cooking procedures for food safety and best flavor, tenderness and juiciness. Willow Creek Meats will have samples of smoked beef product on hand for the crowd that demonstrate the differences in tenderness, juiciness and flavor between CAB level product and Select/Standard product.
The Coppermill Steakhouse will demonstrate n awesome and quick beef recipe idea, and offer samples of the beef treat for the crowd.
